how do you quote multiple people here?

Don't click and have it written up automatically, write it yourself.
It shows posts below where you write yours, so you can C+P what they say, then put it inside [ quote=whoever ] [ /quote ]

If you can't be bothered to type the tags then C+P, another suggestion is to open the forum in another window, click quote, then copy the code from that window into the window you are writing the post in.
